Philly Cheesesteak Tacos

Ingredients
- 1½ lb flank steak
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil, divided
- 2 onions, sliced
- 2 red or green bell peppers, cut into strips
- 12 corn tortillas, heated
- 1½ cups shredded mozzarella cheese (or use provolone cheese)
Instructions
- Sprinkle steak with salt and pepper. Cook in 1 Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let stand 5 minutes; thinly slice across the grain.
- Cook onions and bell peppers in 2 Tbsp hot oil in same skillet over medium-high heat 8 minutes or until tender. Add beef to skillet, tossing to combine.
- Serve beef mixture in tortillas; sprinkle with cheese.
