Pistachio Gremolata Flank Steak
Maple Mashed Sweet Potatoes
Ingredients
- 2 Tbsp olive oil, divided
- ½ tsp salt, divided
- ¼ tsp pepper
- ¼ tsp garlic powder
- ¼ tsp paprika
- ¾ lb flank steak
- ¼ cup salted, roasted pistachios
- 2 Tbsp fresh parsley leaves
- 1 Tbsp lemon zest
- 1 small clove garlic
Instructions
- Preheat oven to 425°F. Place a grill pan in oven while preheating.
- Stir together 1 Tbsp oil, ¼ tsp salt, pepper, garlic powder, and paprika in a small bowl; rub over steak.
- Add steak to hot pan; bake 15 minutes or to desired doneness. Let stand 10 minutes before slicing diagonally across the grain.
- Meanwhile, process nuts, parsley, 1 Tbsp oil, lemon zest, garlic, and ¼ tsp salt in a food processor until finely chopped. Serve gremolata with steak.

- 1 (24-oz) pkg refrigerated mashed sweet potatoes
- 1 Tbsp maple syrup
- ½ Tbsp butter
Side Dish Instructions
- Microwave potatoes according to package directions; reserve half for a future meal. Stir syrup and butter into remaining potatoes .
