Pistachio Gremolata Flank Steak

Ingredients

  • 2 Tbsp olive oil, divided
  • ½ tsp salt, divided
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • ¼ tsp paprika 
  • ¾ lb flank steak
  • ¼ cup salted, roasted pistachios
  • 2 Tbsp fresh parsley leaves
  • 1 Tbsp lemon zest
  • 1 small clove garlic

Instructions

  1. Preheat oven to 425°F. Place a grill pan in oven while preheating.
  2. Stir together 1 Tbsp oil, ¼ tsp salt, pepper, garlic powder, and paprika in a small bowl; rub over steak.
  3. Add steak to hot pan; bake 15 minutes or to desired doneness. Let stand 10 minutes before slicing diagonally across the grain.
  4. Meanwhile, process nuts, parsley, 1 Tbsp oil, lemon zest, garlic, and ¼ tsp salt in a food processor until finely chopped. Serve gremolata with steak.

  • 1 (24-oz) pkg refrigerated mashed sweet potatoes
  • 1 Tbsp maple syrup
  • ½ Tbsp butter

Side Dish Instructions

  1. Microwave potatoes according to package directions; reserve half for a future meal. Stir syrup and butter into remaining potatoes .
