Crispy Chickpea and Avocado "Rice" Bowls

Ingredients

  • ⅔ cup sliced almonds
  • 2 (12-oz) pkg cauliflower crumbles
  • 1½ cups sea salt-flavored roasted chickpeas
  • ¾ cup chopped fresh parsley
  • 4 radishes, sliced
  • 3 green onions, sliced
  • 2 red apples, thinly sliced
  • 2 avocados, sliced
  • 2 Tbsp nutritional yeast
  • ½ cup vegan lemon turmeric vinaigrette (see Note)

Instructions

  1. Toast nuts in a dry skillet over medium heat until fragrant; cool.
  2. Toss together cauliflower, chickpeas, parsley, radishes, onions, apples, avocados, nutritional yeast, and vinaigrette in a bowl. Top with nuts.
