Crispy Chickpea and Avocado "Rice" Bowls
Multigrain Crispbread
Ingredients
- ⅔ cup sliced almonds
- 2 (12-oz) pkg cauliflower crumbles
- 1½ cups sea salt-flavored roasted chickpeas
- ¾ cup chopped fresh parsley
- 4 radishes, sliced
- 3 green onions, sliced
- 2 red apples, thinly sliced
- 2 avocados, sliced
- 2 Tbsp nutritional yeast
- ½ cup vegan lemon turmeric vinaigrette (see Note)
Instructions
- Toast nuts in a dry skillet over medium heat until fragrant; cool.
- Toss together cauliflower, chickpeas, parsley, radishes, onions, apples, avocados, nutritional yeast, and vinaigrette in a bowl. Top with nuts.
