Roast Beef Sandwiches with Pesto Mayo
Apple and Blueberry TossIngredients
- ¼ cup reduced-fat mayonnaise
- ¼ cup pesto
- 8 (1-oz) slices whole-grain sandwich bread
- ½ lb thin deli-sliced, low-sodium roast beef
- 2 Roma tomatoes, sliced
- 1 cup baby spinach
Instructions
- Stir together mayonnaise and pesto. Spread mayonnaise mixture over bread slices. Top 4 slices with roast beef, tomatoes, and spinach. Top with remaining bread slices.
