Parmesan Chicken Piccata
Garlicky Green Beans and CarrotsIngredients
- 3 (8-oz) boneless, skinless chicken breasts, cut in half lengthwise
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp all-purpose flour
- 2 Tbsp olive oil
- ¼ cup lemon juice
- ¼ cup low-sodium chicken broth
- 3 Tbsp drained capers
- 2 Tbsp butter
- ¼ cup freshly grated Parmesan cheese
Instructions
- Sprinkle chicken with salt, pepper, and flour.
- Cook chicken, in batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Remove chicken from pan.
- Add lemon juice and broth to pan, scraping pan to loosen browned bits. Cook 2 minutes or until liquid is reduced by half.
- Add capers and butter; cook, stirring constantly, 2 minutes or until slightly thickened.
- Spoon sauce over chicken; sprinkle with cheese.
