Loaded Chicken
Steamed Asparagus
Ingredients
- 2 slices center cut bacon
- 2 (6-oz) boneless, skinless chicken breasts
- 1 Tbsp Ranch dressing mix
- 1 oz cream cheese, softened
- ⅓ cup fresh pico de gallo, drained
- ⅓ cup shredded Cheddar cheese
- 1 green onion, sliced
Instructions
- Preheat broiler. Cook bacon in a large skillet over medium-high heat 4 to 6 minutes or until crisp. Drain, reserving drippings in skillet. Crumble bacon.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with seasoning mix.
- Add chicken to drippings in skillet. Cook over medium-high heat 5 to 6 minutes per side or until done.
- Transfer chicken to a small baking dish. Stir together cream cheese and pico de gallo. Top chicken with cream cheese mixture and Cheddar.
- Broil 2 minutes or until cheese melts. Sprinkle with crumbled bacon and onion.
Side Dish Ingredients
- ¾ lb asparagus, trimmed
- 2 tsp olive oil
- ⅛ tsp garlic powder
- ⅛ tsp pepper
Side Dish Instructions
- Steam asparagus in a steamer basket over simmering water 5 minutes or until crisp-tender. Remove from steamer basket.
- Toss asparagus with oil, garlic powder, and pepper.
