Ingredients

  • 8 large eggs
  • ½ tsp pepper
  • ½ lb ground pork sausage
  • ½ red bell pepper, chopped
  • 1 clove garlic, minced
  • ½ tsp ground cumin
  • 1 Tbsp olive oil
  • 1 avocado, sliced
  • ¼ cup fresh salsa

Instructions

  1. Whisk together eggs and pepper; set aside.
  2. Cook sausage, bell pepper, garlic, and cumin in hot oil in large skillet over medium heat 5 to 6 minutes or until sausage is no longer pink, stirring to crumble. Remove sausage from skillet, reserving drippings in skillet.
  3. Add eggs to skillet; cook 4 minutes or until eggs are thickened and set, stirring constantly; stir sausage mixture into cooked eggs.
  4. Divide Cilantro Cauli-Rice recipe among 4 bowls; top with egg mixture, avocado, and salsa.

  • 1 (10-oz) pkg frozen riced cauliflower
  • 2 Tbsp olive oil
  • 2 Tbsp chopped fresh cilantro
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook cauliflower according to package directions. Stir in oil, cilantro, salt, and pepper.
