Southwest Breakfast Bowls
Cilantro Cauli-RiceIngredients
- 8 large eggs
- ½ tsp pepper
- ½ lb ground pork sausage
- ½ red bell pepper, chopped
- 1 clove garlic, minced
- ½ tsp ground cumin
- 1 Tbsp olive oil
- 1 avocado, sliced
- ¼ cup fresh salsa
Instructions
- Whisk together eggs and pepper; set aside.
- Cook sausage, bell pepper, garlic, and cumin in hot oil in large skillet over medium heat 5 to 6 minutes or until sausage is no longer pink, stirring to crumble. Remove sausage from skillet, reserving drippings in skillet.
- Add eggs to skillet; cook 4 minutes or until eggs are thickened and set, stirring constantly; stir sausage mixture into cooked eggs.
- Divide Cilantro Cauli-Rice recipe among 4 bowls; top with egg mixture, avocado, and salsa.

- 1 (10-oz) pkg frozen riced cauliflower
- 2 Tbsp olive oil
- 2 Tbsp chopped fresh cilantro
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook cauliflower according to package directions. Stir in oil, cilantro, salt, and pepper.
