Lemon-Thyme Scrambled Eggs

Ingredients

  • 8 large eggs
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1 tsp chopped fresh thyme
  • 3 Tbsp olive oil

Instructions

  1. Whisk together eggs, salt, pepper, lemon zest, mustard, and thyme in a bowl. Cook egg mixture in hot oil on a large skillet over medium heat, without stirring, until beginning to set on bottom. Reduce heat to low, and cook, stirring constantly, until thickened and set.

  • ½ (16-oz) pkg strawberries, sliced
  • 1 Tbsp chopped fresh mint

Side Dish Instructions

  1. Toss strawberries and mint in a bowl. Chill until ready to serve.
