Lemon-Thyme Scrambled Eggs
Strawberries and Mint
Ingredients
- 8 large eggs
- ½ tsp salt
- ½ tsp pepper
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- 1 tsp chopped fresh thyme
- 3 Tbsp olive oil
Instructions
- Whisk together eggs, salt, pepper, lemon zest, mustard, and thyme in a bowl. Cook egg mixture in hot oil on a large skillet over medium heat, without stirring, until beginning to set on bottom. Reduce heat to low, and cook, stirring constantly, until thickened and set.

- ½ (16-oz) pkg strawberries, sliced
- 1 Tbsp chopped fresh mint
Side Dish Instructions
- Toss strawberries and mint in a bowl. Chill until ready to serve.
