Smoked Salmon and Asparagus Frittata

Ingredients

  • 6 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ lb asparagus, cut into 2-inch pieces
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 (4-oz) pkg smoked salmon, chopped
  • 1 Tbsp chopped green onion

Instructions

  1. Preheat broiler. Whisk together eggs, salt, and pepper in a bowl; set aside.
  2. Cook asparagus and garlic in hot oil in a large skillet over medium heat 4 minutes. Add eggs to skillet; stir quickly. Cook, without stirring, until eggs begin to set. Sprinkle with salmon.
  3. Transfer to oven; broil 3 to 4 minutes or until top is golden and eggs are firm.
  4. Sprinkle with onion. Cut into 4 wedges.
