Smoked Salmon and Asparagus Frittata
Ingredients
- 6 large eggs
- ¼ tsp salt
- ¼ tsp pepper
- ½ lb asparagus, cut into 2-inch pieces
- 2 cloves garlic, minced
- 3 Tbsp olive oil
- 1 (4-oz) pkg smoked salmon, chopped
- 1 Tbsp chopped green onion
Instructions
- Preheat broiler. Whisk together eggs, salt, and pepper in a bowl; set aside.
- Cook asparagus and garlic in hot oil in a large skillet over medium heat 4 minutes. Add eggs to skillet; stir quickly. Cook, without stirring, until eggs begin to set. Sprinkle with salmon.
- Transfer to oven; broil 3 to 4 minutes or until top is golden and eggs are firm.
- Sprinkle with onion. Cut into 4 wedges.
