Cowboy Scrambled Eggs with Cheese and Chorizo
Roasted Zucchini WedgesIngredients
- ½ lb ground chorizo sausage
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 8 large eggs, lightly beaten
- ½ cup shredded Cheddar cheese
- ½ tsp pepper
- ¼ cup chopped fresh cilantro
Instructions
- Cook chorizo and garlic in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until fully cooked and crumbly.
- Reduce heat to medium; pour eggs in skillet, and sprinkle with cheese. Cook 1 to 2 minutes, without stirring, until beginning to set on bottom.
- Using a spatula, gently push eggs towards center of skillet. Repeat motion every 30 seconds until eggs are cooked to desired doneness. Season with pepper, and sprinkle with cilantro.

- 2 zucchini, cut lengthwise into wedges
- 2 Tbsp olive oil
- ¼ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss zucchini wedges, oil, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 20 minutes or until tender, stirring once.
