Cowboy Scrambled Eggs with Cheese and Chorizo

Ingredients

  • ½ lb ground chorizo sausage
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 8 large eggs, lightly beaten
  • ½ cup shredded Cheddar cheese
  • ½ tsp pepper
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook chorizo and garlic in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until fully cooked and crumbly.
  2. Reduce heat to medium; pour eggs in skillet, and sprinkle with cheese. Cook 1 to 2 minutes, without stirring, until beginning to set on bottom.
  3. Using a spatula, gently push eggs towards center of skillet. Repeat motion every 30 seconds until eggs are cooked to desired doneness. Season with pepper, and sprinkle with cilantro.

  • 2 zucchini, cut lengthwise into wedges
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss zucchini wedges, oil, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until tender, stirring once.
