Charred Onion-Dried Fig Farro

Ingredients

  • 2 cups quick-cooking farro
  • ⅓ cup olive oil, divided
  • 3 Tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 large red onion, cut into ½-inch-thick slices
  • 1 cup chopped walnuts
  • 2 oranges, peeled and sectioned
  • 1 (7-oz) pkg dried figs, chopped
  • 1 (5-oz) pkg baby kale

Instructions

  1. Preheat oven to 400°F. Cook farro according to package directions; drain. Stir in ¼ cup oil, lemon juice, salt, and pepper.
  2. Heat an oven-safe skillet over medium-high heat. Toss onions with 1½ Tbsp oil; add to pan, and cook 4 minutes. Turn onions over, add nuts, and transfer pan to oven. Bake 7 to 10 minutes or until onion is tender and nuts are toasted.
  3. Chop onion slices. Toss together farro, onion, nuts, oranges, and figs in a large bowl. Divide kale among serving bowls; top with farro mixture.
