Hoisin-Glazed Tofu

Ingredients

  • 2 (14-oz) pkg extra-firm tofu, drained
  • ⅓ cup water
  • ⅓ cup vegan hoisin sauce
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp refrigerated ginger paste
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg thin green beans, halved
  • 1 cup cashew halves and pieces

Instructions

  1. Press tofu with several layers of paper towels to remove excess liquid. Place a heavy skillet over paper towel-topped tofu and let stand 10 minutes; cube tofu.
  2. Meanwhile, whisk together water, hoisin, soy sauce, ginger, garlic, and crushed red pepper.
  3. Heat oil in a large nonstick skillet over medium-high heat; add tofu.
  4. Brown tofu, in batches, 4 to 5 minutes; add green beans and hoisin mixture.
  5. Cover and cook 3 minutes or until green beans are tender; uncover and cook, stirring, 2 minutes longer or until sauce is thickened.
  6. Serve over soba noodles; sprinkle with nuts.
