Hoisin-Glazed Tofu
Warm Soba NoodlesIngredients
- 2 (14-oz) pkg extra-firm tofu, drained
- ⅓ cup water
- ⅓ cup vegan hoisin sauce
- 2 Tbsp low-sodium soy sauce
- 2 Tbsp refrigerated ginger paste
- 2 cloves garlic, minced
- ¼ tsp crushed red pepper
- 2 Tbsp olive oil
- 1 (16-oz) pkg thin green beans, halved
- 1 cup cashew halves and pieces
Instructions
- Press tofu with several layers of paper towels to remove excess liquid. Place a heavy skillet over paper towel-topped tofu and let stand 10 minutes; cube tofu.
- Meanwhile, whisk together water, hoisin, soy sauce, ginger, garlic, and crushed red pepper.
- Heat oil in a large nonstick skillet over medium-high heat; add tofu.
- Brown tofu, in batches, 4 to 5 minutes; add green beans and hoisin mixture.
- Cover and cook 3 minutes or until green beans are tender; uncover and cook, stirring, 2 minutes longer or until sauce is thickened.
- Serve over soba noodles; sprinkle with nuts.
