Italian Beef and Bacon Salad
Parmesan ToastsIngredients
- 8 slices center cut bacon, chopped
- Reserved 2½ cups cooked ground beef (from Italian Beefy Pasta Bake recipe)
- 2 (10-oz) pkg chopped romaine lettuce
- 1 (10-oz) pkg shredded carrots
- 2 avocados, chopped
- 3 Roma tomatoes, chopped
- 1 (1-oz) pkg fresh basil, finely chopped
- ½ cup olive oil vinaigrette
Instructions
- Cook bacon in a large skillet over medium heat 6 minutes or until crisp; drain on paper towels.
- Microwave beef until thoroughly heated.
- Combine lettuce, beef, bacon, carrots, avocados, tomatoes, and basil; toss. Drizzle with vinaigrette.
Side Dish Ingredients
- 6 oz French baguette
- ½ cup freshly shredded Parmesan cheese
Side Dish Instructions
- Preheat oven to 400°F.
- Cut baguette into ½-inch-thick slices. Place on a baking sheet, and sprinkle with cheese.
- Bake 10 minutes or until bread is toasted and cheese is melted.
