Cheesy-Dill Pickle Sloppy Joes

Ingredients

  • 1½ lb plant-based ground beef
  • 1 onion, chopped
  • ¾ cup chili sauce
  • ½ cup low-sodium chicken broth
  • ½ cup ketchup
  • 2 Tbsp apple cider vinegar
  • ¼ cup chopped dill pickles
  • 1 (8-oz) pkg shredded Cheddar cheese, divided
  • 6 hamburger buns, lightly toasted
  • 1 (8-oz) pkg shredded iceberg lettuce

Instructions

  1. Cook plant-based beef and onion in a large skillet coated with cooking spray over medium-high heat until beef is browned and crumbled; drain well.
  2. Place beef mixture, chili sauce, broth, ketchup, and vinegar in a greased 5- to 7-quart slow cooker, stirring well. Cover and cook on LOW 6 to 7 hours.
  3. Stir in pickles and 1 cup cheese; cover and let stand 5 minutes.
  4. Serve beef mixture in buns with 1 cup cheese and lettuce.

  • 1 (20-oz) pkg frozen sea salt sweet potato fries
