Ingredients

  • 1½ lb plant-based ground beef
  • 1 (1-oz) envelope low-sodium taco seasoning mix
  • 1 onion, chopped
  • 1 (15-oz) can whole kernel corn, drained
  • 1 (14.5-oz) can diced tomatoes and green chiles
  • 3 Tbsp tomato paste
  • ¼ cup low-sodium beef broth
  • 1 (11-oz) bag tortilla chips
  • 1 (8-oz) pkg shredded Mexican-blend cheese
  • 1 (8-oz) pkg shredded lettuce
  • 1 (8-oz) carton sour cream

Instructions

  1. Cook plant-based beef in a large skillet over medium-high heat 8 to 10 minutes or until browned and crumbly; drain well.
  2. Combine plant-based beef, taco seasoning mix, onion, corn, tomatoes, tomato paste, and broth in a greased 5- to 7-quart slow cooker.
  3. Cover and cook on LOW 6 to 7 hours.
  4. Divide tortilla chips among 6 plates; top with plant-based beef mixture, cheese, lettuce, and sour cream.
