Roasted Chicken Thighs
Zucchini and Mushrooms
Ingredients
- 1½ cups red or black seedless grapes
- 1 red onion, cut into thin wedges
- 6 sprigs fresh thyme
- 1½ Tbsp olive oil
- 1 lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 425°F. Toss together grapes, onion, thyme, and oil on a foil-lined rimmed baking sheet; spread in a single layer. Arrange chicken over grapes; sprinkle with salt and pepper.
- Bake 20 minutes or until chicken is done.
- Increase oven temperature to broil. Broil 2 to 3 minutes or until chicken is browned.

- ½ Tbsp olive oil
- 2 zucchini, cut into ½-inch half-moons
- ½ cup sliced mushrooms
- 2 small cloves garlic, minced
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Melt butter with oil in a large skillet over medium heat; add zucchini, mushrooms, garlic, salt, and pepper. Sauté until just tender.
