Roasted Chicken Thighs

Ingredients

  • 1½ cups red or black seedless grapes
  • 1 red onion, cut into thin wedges
  • 6 sprigs fresh thyme
  • 1½ Tbsp olive oil
  • 1 lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 425°F. Toss together grapes, onion, thyme, and oil on a foil-lined rimmed baking sheet; spread in a single layer. Arrange chicken over grapes; sprinkle with salt and pepper.
  2. Bake 20 minutes or until chicken is done.
  3. Increase oven temperature to broil. Broil 2 to 3 minutes or until chicken is browned.

  • ½ Tbsp olive oil
  • 2 zucchini, cut into ½-inch half-moons
  • ½ cup sliced mushrooms
  • 2 small cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Melt butter with oil in a large skillet over medium heat; add zucchini, mushrooms, garlic, salt, and pepper. Sauté until just tender.
