Strawberry-Almond Arugula Salad

Ingredients
- 2 Tbsp butter, divided
- 1 (16-oz) pkg sliced baby portobello mushrooms
- 6 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- ½ cup all-purpose flour
- ¾ cup low-sodium chicken broth
- ¼ cup Marsala wine
- 1½ tsp cornstarch
- 1 Tbsp water
- 6 slices mozzarella cheese
- 3 Tbsp sliced green onions (optional)
Instructions
- Melt 1 Tbsp butter in a large skillet over medium-high heat. Add mushrooms; cook 6 to 8 minutes or until browned and tender. Remove from skillet.
- Meanwhile, pound chicken in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper. Place flour in a shallow bowl; dredge chicken in flour.
- Melt 1 Tbsp butter in another large skillet over medium-high heat. Cook chicken, in batches if necessary, 5 minutes per side or until browned.
- Stir in broth and wine, scraping skillet to loosen browned bits. Bring to a boil; reduce heat, and simmer 2 minutes. Stir together cornstarch and water; add to skillet, and cook 2 minutes, stirring, or until thickened.
- Top chicken with mushrooms and cheese slices; cover and cook until cheese melts. Sprinkle with onions, if desired.

- 6 cups arugula
- 1 cup sliced strawberries
- ½ cup sliced almonds
- ½ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl.
