Creamy Ranch Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ½ (8-oz) block cream cheese, softened
  • ¼ cup milk
  • 1 Tbsp Ranch dressing mix 
  • ¼ tsp hot sauce (optional)

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done. Remove from skillet, and keep warm.
  3. Add cream cheese and milk to skillet, stirring until cheese is melted. Stir in dressing mix and hot sauce (if using), until blended.
  4. Divide chicken among 2 plates; spoon sauce over chicken.

  • ¾ cup long-grain white rice
  • ½ (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook green beans according to package directions; season with salt and pepper to taste.
