Chicken Tinga Lettuce Wraps

Ingredients

  • 1½ cups shredded rotisserie chicken
  • 1 (8-oz) pouch chipotle taco sauce
  • 12 Bibb or Boston lettuce leaves
  • 3 radishes, sliced
  • 1 avocado, diced
  • ¼ cup thinly sliced red onion
  • ½ cup crumbled feta cheese
  • Chopped fresh cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. Cook chicken and sauce in a large skillet 4 to 5 minutes or until simmering.
  2. Arrange lettuce in 4 stacks. Top with chicken mixture, radishes, avocado, onion, and cheese. Serve with cilantro and lime wedges, if desired.

  • 2 cups cubed pineapple
  • 1 Tbsp lime juice
