Chicken Tinga Lettuce Wraps
Lime-Scented Pineapple
Ingredients
- 1½ cups shredded rotisserie chicken
- 1 (8-oz) pouch chipotle taco sauce
- 12 Bibb or Boston lettuce leaves
- 3 radishes, sliced
- 1 avocado, diced
- ¼ cup thinly sliced red onion
- ½ cup crumbled feta cheese
- Chopped fresh cilantro (optional)
- Lime wedges (optional)
Instructions
- Cook chicken and sauce in a large skillet 4 to 5 minutes or until simmering.
- Arrange lettuce in 4 stacks. Top with chicken mixture, radishes, avocado, onion, and cheese. Serve with cilantro and lime wedges, if desired.

- 2 cups cubed pineapple
- 1 Tbsp lime juice
