Ingredients
- ¾ lb boneless, skinless chicken breasts
- ¼ cup pimiento cheese
- ⅛ tsp garlic salt
- 6 slices bacon
- 1 Tbsp canola oil
Instructions
- Preheat oven to 375°F. Cut chicken into 3 pieces. Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Cut a 2-inch slit horizontally into each breast. Stuff pimiento cheese into each pocket. Sprinkle top of chicken with garlic salt.
- Wrap each chicken breast with two bacon slices; secure with wooden picks.
- Heat oil in a cast-iron or ovenproof skillet over medium heat. Brown chicken rolls 3 minutes, turning often. Place skillet in oven, and bake 15 to 20 minutes or until done.

- ¼ tsp garlic salt
- ⅛ tsp pepper

- Toss hot green beans with butter, lemon juice, zest, garlic salt, and pepper in a bowl.
