Chicken Fajita Bowls

Ingredients

  • 1 lb thin sliced boneless, skinless chicken breasts, thinly sliced
  • ¼ cup olive oil, divided
  • ½ green bell pepper, thinly sliced
  • ½ red onion, thinly sliced
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (9-oz) pkg chopped romaine lettuce
  • ½ cup fresh salsa
  • 6 oz crumbled queso fresco

Instructions

  1. Cook chicken in 2 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until done. Remove chicken from skillet, and set aside.
  2. Cook bell pepper, onion, and garlic in 2 Tbsp hot oil in same skillet 5 minutes or until tender.
  3. Return chicken to skillet, and sprinkle with cumin, salt, and pepper; cook until thoroughly heated.
  4. Divide lettuce among 4 bowls; top with chicken mixture, salsa, and cheese.
