Chicken Fajita Bowls
Ingredients
- 1 lb thin sliced boneless, skinless chicken breasts, thinly sliced
- ¼ cup olive oil, divided
- ½ green bell pepper, thinly sliced
- ½ red onion, thinly sliced
- 1 clove garlic, minced
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- 1 (9-oz) pkg chopped romaine lettuce
- ½ cup fresh salsa
- 6 oz crumbled queso fresco
Instructions
- Cook chicken in 2 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until done. Remove chicken from skillet, and set aside.
- Cook bell pepper, onion, and garlic in 2 Tbsp hot oil in same skillet 5 minutes or until tender.
- Return chicken to skillet, and sprinkle with cumin, salt, and pepper; cook until thoroughly heated.
- Divide lettuce among 4 bowls; top with chicken mixture, salsa, and cheese.
