All-Beef Hot Dogs with Cucumber-Tomato Salsa

Ingredients
- 8 organic uncured beef hot dogs
- 1 Tbsp olive oil, divided
- 1 tomato, diced
- 1 English cucumber, diced
- ¼ cup chopped red onion
- 2 Tbsp lemon juice
- 2 Tbsp chopped fresh dill (or use 2 tsp dried)
- ¼ tsp salt
- ¼ tsp pepper
- 8 romaine lettuce leaves
Instructions
- Brown hot dogs, in batches, in ½ Tbsp hot oil per batch in a large skillet over medium heat 4 to 5 minutes, turning often.
- Meanwhile, combine tomato, cucumber, onion, lemon juice, dill, salt, and pepper.
- Place a hot dog in each lettuce leaf. Cut lengthwise halfway through each hot dog; top with salsa. Roll up to serve.
