All-Beef Hot Dogs with Cucumber-Tomato Salsa

Ingredients

  • 8 organic uncured beef hot dogs
  • 1 Tbsp olive oil, divided
  • 1 tomato, diced
  • 1 English cucumber, diced
  • ¼ cup chopped red onion
  • 2 Tbsp lemon juice
  • 2 Tbsp chopped fresh dill (or use 2 tsp dried)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 8 romaine lettuce leaves

Instructions

  1. Brown hot dogs, in batches, in ½ Tbsp hot oil per batch in a large skillet over medium heat 4 to 5 minutes, turning often.
  2. Meanwhile, combine tomato, cucumber, onion, lemon juice, dill, salt, and pepper.
  3. Place a hot dog in each lettuce leaf. Cut lengthwise halfway through each hot dog; top with salsa. Roll up to serve.
