Eggs in Tomato Sauce with Spinach and Feta

Ingredients
- ½ small onion, chopped
- 3 Tbsp olive oil
- 1 (5-oz) pkg baby spinach
- 2 cloves garlic, minced
- 1 cup crushed tomatoes with basil
- ½ cup crumbled feta cheese
- 8 large eggs
- Hot sauce (optional)
Instructions
- Cook onion in hot oil in a large ovenproof skillet over medium heat 5 minutes or until tender. Add spinach and garlic; cook 1 minute or until spinach wilts. Stir in tomatoes; season lightly with salt and pepper.
- Simmer 5 minutes or until thickened. Sprinkle with cheese.
- Gently crack eggs into skillet over tomatoes. Transfer skillet to oven, and bake 7 to 10 minutes or until eggs are just set. Serve with hot sauce, if desired.
