Eggs in Tomato Sauce with Spinach and Feta

Ingredients

  • ½ small onion, chopped
  • 3 Tbsp olive oil
  • 1 (5-oz) pkg baby spinach
  • 2 cloves garlic, minced
  • 1 cup crushed tomatoes with basil
  • ½ cup crumbled feta cheese
  • 8 large eggs
  • Hot sauce (optional)

Instructions

  1. Cook onion in hot oil in a large ovenproof skillet over medium heat 5 minutes or until tender. Add spinach and garlic; cook 1 minute or until spinach wilts. Stir in tomatoes; season lightly with salt and pepper.
  2. Simmer 5 minutes or until thickened. Sprinkle with cheese.
  3. Gently crack eggs into skillet over tomatoes. Transfer skillet to oven, and bake 7 to 10 minutes or until eggs are just set. Serve with hot sauce, if desired.
