Pork Chops with Herb Butter
Mashed Sweet Potatoes and Sweet PeasIngredients
- 2 (1-inch-thick) boneless pork loin chops
- 3 Tbsp butter, softened
- 2 Tbsp chopped fresh parsley
- 1 Tbsp Dijon mustard
Instructions
- Preheat oven to 425°F. Season pork chops lightly with salt and pepper; place on a foil-lined rimmed baking sheet. Bake 10 minutes.
- Stir together butter, parsley and mustard; dollop mixture over pork.
- Bake 10 minutes or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 5 minutes before serving.

- 2 sweet potatoes, peeled and chopped
- 3 Tbsp butter
- 3 Tbsp packed brown sugar
- ½ tsp salt
- 1 (10-oz) pkg frozen sweet peas and butter sauce
Side Dish Instructions
- Place sweet potatoes in a large saucepan; add water to cover. Bring to a boil, reduce heat, and simmer 10 minutes or until potatoes are tender; drain well.
- Return potatoes to saucepan; add butter, brown sugar, and salt. Mash to desired texture.
- Cook peas according to package directions.
