Pork Chops with Herb Butter

Mashed Sweet Potatoes and Sweet Peas

Ingredients

  • 2 (1-inch-thick) boneless pork loin chops
  • 3 Tbsp butter, softened
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp Dijon mustard

Instructions

  1. Preheat oven to 425°F. Season pork chops lightly with salt and pepper; place on a foil-lined rimmed baking sheet. Bake 10 minutes.
  2. Stir together butter, parsley and mustard; dollop mixture over pork.
  3. Bake 10 minutes or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 5 minutes before serving.

Side Dish Ingredients

  • 2 sweet potatoes, peeled and chopped
  • 3 Tbsp butter
  • 3 Tbsp packed brown sugar
  • ½ tsp salt
  • 1 (10-oz) pkg frozen sweet peas and butter sauce

Side Dish Instructions

  1. Place sweet potatoes in a large saucepan; add water to cover. Bring to a boil, reduce heat, and simmer 10 minutes or until potatoes are tender; drain well.
  2. Return potatoes to saucepan; add butter, brown sugar, and salt. Mash to desired texture.
  3. Cook peas according to package directions.
