Peanut Butter Marshmallow Cups

Ingredients

  • 1 cup creamy peanut butter
  • ½ cup powdered sugar
  • ¾ tsp salt
  • 3 (4-oz) bars bittersweet chocolate, chopped
  • ⅓ cup marshmallow fluff
  • 12 round buttery crackers

Instructions

  1. Line a muffin pan with paper baking cups. Combine peanut butter, powdered sugar, and salt in a bowl. Mix until well blended.
  2. Place chocolate in a heatproof bowl; microwave at 50% power in 30-second intervals, stirring well between each interval, until melted.
  3. Spoon 1 Tbsp chocolate into each baking cup, covering bottom completely. Tilt muffin pan, allowing chocolate to go slightly up sides of each cup.
  4. Place pan in refrigerator 5 minutes or until chocolate hardens.
  5. Meanwhile, roll peanut butter mixture into teaspoon-size balls. Press each ball flat with your hands. Place one peanut butter ball in each cup.
  6. Spoon 1 tsp marshmallow fluff over peanut butter in each cup. Place one round cracker over marshmallow fluff in each cup. Top each cup with another 1 to 2 Tbsp melted chocolate until crackers are covered.
  7. Place muffin pan in refrigerator 20 minutes or until chocolate is set. Store candy cups, covered, in refrigerator. Makes 12 servings.
