Peanut Butter Marshmallow Cups
Ingredients
- 1 cup creamy peanut butter
- ½ cup powdered sugar
- ¾ tsp salt
- 3 (4-oz) bars bittersweet chocolate, chopped
- ⅓ cup marshmallow fluff
- 12 round buttery crackers
Instructions
- Line a muffin pan with paper baking cups. Combine peanut butter, powdered sugar, and salt in a bowl. Mix until well blended.
- Place chocolate in a heatproof bowl; microwave at 50% power in 30-second intervals, stirring well between each interval, until melted.
- Spoon 1 Tbsp chocolate into each baking cup, covering bottom completely. Tilt muffin pan, allowing chocolate to go slightly up sides of each cup.
- Place pan in refrigerator 5 minutes or until chocolate hardens.
- Meanwhile, roll peanut butter mixture into teaspoon-size balls. Press each ball flat with your hands. Place one peanut butter ball in each cup.
- Spoon 1 tsp marshmallow fluff over peanut butter in each cup. Place one round cracker over marshmallow fluff in each cup. Top each cup with another 1 to 2 Tbsp melted chocolate until crackers are covered.
- Place muffin pan in refrigerator 20 minutes or until chocolate is set. Store candy cups, covered, in refrigerator. Makes 12 servings.
