Corned Beef Brisket

Ingredients

  • 1 large onion, thinly sliced
  • 1 lb organic red potatoes, halved
  • 4 carrots, cut into chunks
  • 1 small head cabbage, cut into chunks
  • 2 lb corned beef brisket, trimmed
  • 1 (32-oz) carton low-sodium beef broth
  • 1 (8-oz) carton sour cream
  • 3 Tbsp prepared horseradish
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Place onion, potatoes, carrots, and cabbage in a 6- or 7-quart slow cooker. Add brisket and broth. Cover and cook on LOW 9 hours.
  2. Remove brisket from cooker, and slice across the grain.
  3. Combine sour cream and horseradish in a small bowl.
  4. Sprinkle brisket and vegetables with parsley; serve with horseradish cream.
