Flank Steak Tacos

Ingredients

  • 1½ lb flank steak
  • 1 tsp ground chipotle chile pepper
  • ¾ tsp salt, divided
  • 2 mangoes, peeled and chopped
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp lime juice
  • 1 Tbsp olive oil
  • 12 corn tortillas, heated
  • 2 avocados, sliced
  • Lime wedges (optional)

Instructions

  1. Heat an oiled grill pan over medium-high heat; sprinkle steak with chile pepper and ½ tsp salt.
  2. Grill steak 5 to 6 minutes per side or to desired doneness; let stand 15 minutes before thinly slicing across the grain.
  3. Meanwhile, stir together mango, onion, cilantro, lime juice, oil, and ¼ tsp salt.
  4. Divide steak and mango salsa among tortillas; top with avocado, and, if desired, serve with lime wedges.

  • 3 organic bell peppers (any color), thinly sliced
  • 1 onion, halved and sliced
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Sauté bell peppers, onion, cumin, salt, and pepper in hot oil in a large skillet over medium-high heat 6 to 7 minutes or until vegetables are tender.
