Flank Steak Tacos
Sautéed Peppers and Onion
Ingredients
- 1½ lb flank steak
- 1 tsp ground chipotle chile pepper
- ¾ tsp salt, divided
- 2 mangoes, peeled and chopped
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- 2 Tbsp lime juice
- 1 Tbsp olive oil
- 12 corn tortillas, heated
- 2 avocados, sliced
- Lime wedges (optional)
Instructions
- Heat an oiled grill pan over medium-high heat; sprinkle steak with chile pepper and ½ tsp salt.
- Grill steak 5 to 6 minutes per side or to desired doneness; let stand 15 minutes before thinly slicing across the grain.
- Meanwhile, stir together mango, onion, cilantro, lime juice, oil, and ¼ tsp salt.
- Divide steak and mango salsa among tortillas; top with avocado, and, if desired, serve with lime wedges.
Side Dish Ingredients
- 3 organic bell peppers (any color), thinly sliced
- 1 onion, halved and sliced
- 1 tsp ground cumin
- ½ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
Side Dish Instructions
- Sauté bell peppers, onion, cumin, salt, and pepper in hot oil in a large skillet over medium-high heat 6 to 7 minutes or until vegetables are tender.
