Turkey Burgers with Sun-Dried Tomato Aïoli

Ingredients

  • 1 (20-oz) pkg ground turkey
  • 1 tsp garlic salt
  • ¼ cup roasted garlic mayonnaise
  • 1½ Tbsp sun-dried tomato pesto
  • 4 slices tomato
  • 4 slices red onion
  • 2 cups baby arugula

Instructions

  1. Preheat grill or grill pan to medium-high heat. Mix together turkey and garlic salt; shape into 4 patties. Grill, covered, 5 minutes per side or until done.
  2. Meanwhile, combine mayonnaise and pesto.
  3. Divide arugula among 4 plates. Serve burgers, tomato slices, and onion slices on arugula. Dollop with mayonnaise mixture.

Side Dish Ingredients

  • 1½ oz sliced prosciutto
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • ½ tsp Dijon mustard
  • ¼ tsp pepper
  • 1 (12-oz) pkg shaved Brussels sprouts

Side Dish Instructions

  1. Place prosciutto in a single layer on a paper towel-lined plate. Cover with another layer of paper towels. Microwave at HIGH 1 to 2 minutes or until crisp. Crumble.
  2. Combine oil, lemon juice, mustard, and pepper in a large bowl. Add Brussels sprouts and prosciutto; toss.
