Blackened Catfish
Cajun SlawIngredients
- 2 lb frozen catfish fillets, thawed and patted dry
- 4 Tbsp butter, melted
- 2 Tbsp blackened seasoning
- 3 Tbsp olive oil
Instructions
- Dip fillets in melted butter; sprinkle with blackened seasoning.
- Heat a cast-iron skillet over high heat on stovetop, or grill outdoors using a grill pan.
- Heat 1½ Tbsp oil in skillet; cook half of fillets 3 to 4 minutes per side or until fish flakes with a fork.
- Repeat procedure with remaining oil and fillets.
Side Dish Ingredients
- 1 cup mayonnaise
- 3 Tbsp apple cider vinegar
- 2 Tbsp spicy brown mustard
- 2 tsp Creole seasoning
- 1 (16-oz) pkg angel hair coleslaw (or use tricolor coleslaw)
- 1 green bell pepper, cut in julienne strips
- 2 green onions, thinly sliced
Side Dish Instructions
- Whisk together mayonnaise, vinegar, mustard, and Creole seasoning in a large bowl.
- Add coleslaw, bell pepper, and onions; toss.
