Ingredients

  • 2 whole-grain English muffins, split
  • 2 Tbsp reduced-fat mayonnaise
  • ½ lb deli-sliced low-sodium turkey breast
  • 3 oz shredded smoked Gouda cheese (or use your favorite cheese)
  • 1 tart apple, halved and thinly sliced
  • ¼ cup thinly sliced red onion
  • 1 cup arugula

Instructions

  1. Preheat broiler. Arrange muffins on a baking sheet, cut sides up. Spread mayonnaise over muffins. Divide turkey among muffins; top with cheese.
  2. Broil sandwiches 3 to 5 minutes. Top with apple, onion, and arugula.
