Greek Yogurt Pancakes

Ingredients

  • 2 cups whole-grain pancake mix
  • 1 Tbsp sugar
  • ½ tsp salt
  • 1¼ cups 1% low-fat milk
  • ¾ cup fat-free vanilla Greek yogurt
  • 2 large eggs, lightly beaten

Instructions

  1. Stir together pancake mix, sugar, and salt in a large bowl.
  2. Whisk together milk, yogurt, and eggs in a bowl until well blended. Add milk mixture to flour mixture, stirring just until combined. Let stand 10 to 15 minutes.
  3. Pour batter by ¼ cupfuls onto a hot nonstick skillet coated with cooking spray over medium heat.
  4. Cook until tops are covered with bubbles. Turn and cook other sides. Serve with Warm Cherry Sauce.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen sweet cherries
  • 3 Tbsp honey
  • ½ tsp kosher salt
  • ½ tsp pure vanilla extract

Side Dish Instructions

  1. Combine all ingredients in a medium saucepan over medium heat. Bring to a simmer; cook 10 minutes or until slightly thickened.
  2. Serve immediately, or cover and chill overnight.
