Greek Yogurt Pancakes
Warm Cherry SauceIngredients
- 2 cups whole-grain pancake mix
- 1 Tbsp sugar
- ½ tsp salt
- 1¼ cups 1% low-fat milk
- ¾ cup fat-free vanilla Greek yogurt
- 2 large eggs, lightly beaten
Instructions
- Stir together pancake mix, sugar, and salt in a large bowl.
- Whisk together milk, yogurt, and eggs in a bowl until well blended. Add milk mixture to flour mixture, stirring just until combined. Let stand 10 to 15 minutes.
- Pour batter by ¼ cupfuls onto a hot nonstick skillet coated with cooking spray over medium heat.
- Cook until tops are covered with bubbles. Turn and cook other sides. Serve with Warm Cherry Sauce.
Side Dish Ingredients
- 1 (12-oz) pkg frozen sweet cherries
- 3 Tbsp honey
- ½ tsp kosher salt
- ½ tsp pure vanilla extract
Side Dish Instructions
- Combine all ingredients in a medium saucepan over medium heat. Bring to a simmer; cook 10 minutes or until slightly thickened.
- Serve immediately, or cover and chill overnight.
