Smoky Pork

Balsamic-Roasted Broccoli and Cauliflower

Ingredients

  • 1 onion, chopped
  • 1 (14.5-oz) can low-sodium chicken broth
  • 2 Tbsp smoked paprika (or use regular)
  • 1 Tbsp garlic powder
  • 1 Tbsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 4 lb bone-in pork shoulder roast, well trimmed

Instructions

  1. Place onion and broth in a 5- to 7-quart slow cooker.
  2. Combine paprika, garlic powder, oregano, cumin, salt, and pepper in a small bowl. Rub spice mixture over pork, and place in cooker.
  3. Cover and cook on LOW 10 hours or until pork is tender. (Shred and reserve 3 cups pork for Cuban Lettuce Wraps recipe.).

Side Dish Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 1 (12-oz) pkg cauliflower florets
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp lemon pepper seasoning
  • 2 Tbsp balsamic vinegar

Side Dish Instructions

  1. Preheat oven to 350°F.
  2. Toss together broccoli, cauliflower, oil, garlic, salt, and lemon pepper on a greased rimmed baking sheet; spread in a single layer.
  3. Roast 20 to 25 minutes or until lightly browned and tender; drizzle with vinegar just before serving.
