Cuban Lettuce Wraps

Ingredients

  • Reserved 3 cups cooked shredded pork (from Smoky Pork recipe)
  • 1 (16-oz) pkg diced cooked ham
  • 1 small head purple cabbage, shredded
  • 1½ cups dill pickle slices
  • 5 Tbsp yellow mustard
  • 2 Tbsp olive oil
  • 2 tsp rice vinegar
  • ½ tsp pepper
  • 1 (3-count) pkg romaine lettuce hearts, separated into leaves

Instructions

  1. Toss together pork and ham in a microwave-safe bowl. Microwave on HIGH 2 to 3 minutes or until heated through.
  2. Toss together cabbage, pickles, mustard, oil, vinegar, and pepper.
  3. Serve pork mixture in lettuce leaves topped with cabbage mixture.

Side Dish Ingredients

  • 1 (16-oz) container pineapple chunks, chopped
  • 1 large mango, peeled and chopped
  • 1 Gala apple, cored and chopped
  • ¼ cup chopped fresh mint
  • 1 Tbsp honey
  • ½ tsp ground ginger

Side Dish Instructions

  1. Combine pineapple, mango, apple, and mint in a large bowl.
  2. Heat honey in a microwave safe bowl on HIGH 30 seconds. Add ginger; stir until ginger dissolves.
  3. Add honey mixture to fruit; toss until well blended.
