Cuban Lettuce Wraps
Ginger Fruit Salad
Ingredients
- Reserved 3 cups cooked shredded pork (from Smoky Pork recipe)
- 1 (16-oz) pkg diced cooked ham
- 1 small head purple cabbage, shredded
- 1½ cups dill pickle slices
- 5 Tbsp yellow mustard
- 2 Tbsp olive oil
- 2 tsp rice vinegar
- ½ tsp pepper
- 1 (3-count) pkg romaine lettuce hearts, separated into leaves
Instructions
- Toss together pork and ham in a microwave-safe bowl. Microwave on HIGH 2 to 3 minutes or until heated through.
- Toss together cabbage, pickles, mustard, oil, vinegar, and pepper.
- Serve pork mixture in lettuce leaves topped with cabbage mixture.
Side Dish Ingredients
- 1 (16-oz) container pineapple chunks, chopped
- 1 large mango, peeled and chopped
- 1 Gala apple, cored and chopped
- ¼ cup chopped fresh mint
- 1 Tbsp honey
- ½ tsp ground ginger
Side Dish Instructions
- Combine pineapple, mango, apple, and mint in a large bowl.
- Heat honey in a microwave safe bowl on HIGH 30 seconds. Add ginger; stir until ginger dissolves.
- Add honey mixture to fruit; toss until well blended.
