Creamy Italian Chicken
Broccoli and Rice Pilaf and Poppy Seed Potato RollsIngredients
- 2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 (0.7-oz) envelopes Italian dressing mix
- ½ cup white wine (or use chicken broth)
- ¼ cup low-sodium chicken broth
- ¼ cup butter, cubed
- 1 (8-oz) pkg cream cheese, cubed and softened
Instructions
- Place chicken in a greased 5- to 7-quart slow cooker.
- Sprinkle with dressing mix; pour wine and broth over chicken, and sprinkle with butter. Cover and cook on LOW 8 hours or until chicken is done.
- Add cream cheese to slow cooker, stirring until melted.
- Serve over Broccoli and Rice Pilaf recipe.
Side Dish Ingredients
- ¼ cup butter, divided
- ½ cup finely chopped onion
- 3 cups chopped fresh broccoli
- 1½ cups uncooked long-grain rice
- 3 cups low-sodium chicken broth
- ½ (12-count) pkg potato rolls
- 1 tsp poppy seeds
Side Dish Instructions
- Preheat oven to 350°F. Melt 2 Tbsp butter in a saucepan over medium heat. Add onion; cook, stirring frequently, 3 minutes.
- Add broccoli; cook 3 minutes. Add rice; cook 1 minute.
- Add broth; bring to a boil over medium-high heat; cover, reduce heat, and simmer 15 to 20 minutes or until rice is tender.
- Place rolls on a baking sheet. Melt 2 Tbsp butter, and brush over rolls; sprinkle rolls with poppy seeds.
- Bake 10 minutes or until brown and toasted.
