Chicken Ranch Pasta

Ingredients

  • 1 (16-oz) pkg angel hair pasta
  • 10 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • 1 (14.5-oz) can chicken broth
  • 1 (1-oz) envelope Ranch dressing mix
  • 1 (8-oz) block cream cheese, softened
  • 2 Tbsp lemon juice

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, cook bacon in a large deep skillet over medium heat until crisp; drain, reserving drippings in skillet.
  3. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Cook chicken in hot drippings over medium heat 5 to 6 minutes per side or until done. Remove from skillet, and thinly slice.
  4. Add broth, scraping skillet to loosen browned bits. Stir in dressing mix, cream cheese, and lemon juice, whisking until blended. Add pasta, and chicken; toss. Cook until thoroughly heated. Sprinkle with bacon.
