Upside Down Shepherd's Pie
Cheddar Cheese Mashed Potatoes and Salad WedgesIngredients
- 1 lb ground beef
- ½ cup chopped onion
- ½ (16-oz) pkg frozen mixed vegetables
- 2 Tbsp tomato paste
- ½ cup low-sodium beef broth
- 1½ Tbsp Worcestershire sauce
- 3 slices frozen garlic Texas toast
Instructions
- Cook beef and onion in a large skillet over medium heat 8 minutes or until browned and crumbly; drain.
- Transfer to a 3- to 4-quart slow cooker. Add vegetables, tomato paste, broth, and Worcestershire sauce.
- Cover and cook on LOW 8 hours. (Reserve 1½ cups beef mixture for Beef Hand Pies recipe.) Serve remaining beef mixture.
- Bake Texas toast according to package directions.
- Arrange toast on each plate. Spoon Cheddar Cheese Mashed Potatoes over toast; spoon beef mixture over potatoes.
Side Dish Ingredients
- 1 lb red potatoes, coarsely chopped
- 3 Tbsp butter
- ½ cup heavy cream
- ½ cup shredded sharp Cheddar cheese
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ head iceberg lettuce, cut into 3 wedges
- 1 Roma tomato, chopped
- 3 Tbsp Italian dressing
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a Dutch oven over medium-high heat; cook 12 minutes or until tender.
- Drain potatoes, and return to pot; mash to desired consistency with a potato masher. Stir in butter, cream, cheese, salt, and pepper, stirring until combined.
- Top salad wedges with tomato and dressing.
