Old-Fashioned Ground Beef Chili

Ingredients

  • 2 lb lean ground beef
  • 2 carrots, diced
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 6 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (32-oz) carton beef broth
  • 2 (14.5-oz) cans diced tomatoes
  • 2 Tbsp chili powder
  • 2 Tbsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Cook beef, carrots, bell pepper, onion, and garlic in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until beef is browned, stirring to crumble.
  2. Transfer meat mixture to a 4- to 6-quart slow cooker. Stir in broth, tomatoes, chili powder, cumin, oregano, salt, and pepper.
  3. Cover and cook on LOW 6 hours. (Reserve half of chili for Chili-Stuffed Potatoes recipe.) Serve remaining chili.

Side Dish Ingredients

  • ½ cup freshly shredded Cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onion
  • ¼ cup pickled jalapeños

Side Dish Instructions

  1. Top each serving of chili with cheese, sour cream, green onion, and jalapeños.
