Old-Fashioned Ground Beef Chili

- 2 lb lean ground beef
- 2 carrots, diced
- 1 green bell pepper, chopped
- 1 onion, chopped
- 6 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (32-oz) carton beef broth
- 2 (14.5-oz) cans diced tomatoes
- 2 Tbsp chili powder
- 2 Tbsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp pepper
Instructions
- Cook beef, carrots, bell pepper, onion, and garlic in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until beef is browned, stirring to crumble.
- Transfer meat mixture to a 4- to 6-quart slow cooker. Stir in broth, tomatoes, chili powder, cumin, oregano, salt, and pepper.
- Cover and cook on LOW 6 hours. (Reserve half of chili for Chili-Stuffed Potatoes recipe.) Serve remaining chili.
Side Dish Ingredients
- ½ cup freshly shredded Cheddar cheese
- ½ cup sour cream
- ¼ cup chopped green onion
- ¼ cup pickled jalapeños
Side Dish Instructions
- Top each serving of chili with cheese, sour cream, green onion, and jalapeños.
