Caribbean Chicken Lettuce Wraps

Ingredients

  • 1 orange
  • 1 cup chopped pineapple
  • 1 red bell pepper, chopped
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • ½ jalapeño pepper, seeded and minced
  • 1 tsp lime zest
  • 1 Tbsp lime juice
  • 1 clove garlic, minced
  • 8 large romaine leaves
  • 4 cooked chicken breasts (from Seared Chicken Breasts recipe or use deli rotisserie chicken)

Instructions

  1. Remove peel from oranges with a paring knife. Section oranges over a large bowl to collect the juices. Coarsely chop orange sections.
  2. Add chopped oranges, pineapple, bell pepper, onion, cilantro, jalapeño, lime zest, lime juice, and garlic to the orange juice in the bowl.
  3. Stack 2 pieces of lettuce on a work surface; fill with chicken and orange mixture. Roll up.
