Caribbean Chicken Lettuce Wraps
Ingredients
- 1 orange
- 1 cup chopped pineapple
- 1 red bell pepper, chopped
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- ½ jalapeño pepper, seeded and minced
- 1 tsp lime zest
- 1 Tbsp lime juice
- 1 clove garlic, minced
- 8 large romaine leaves
- 4 cooked chicken breasts (from Seared Chicken Breasts recipe or use deli rotisserie chicken)
Instructions
- Remove peel from oranges with a paring knife. Section oranges over a large bowl to collect the juices. Coarsely chop orange sections.
- Add chopped oranges, pineapple, bell pepper, onion, cilantro, jalapeño, lime zest, lime juice, and garlic to the orange juice in the bowl.
- Stack 2 pieces of lettuce on a work surface; fill with chicken and orange mixture. Roll up.
