Ingredients

  • ½ lb lean turkey breakfast sausage
  • 8 large eggs
  • ½ tsp pepper
  • 1 cup pico de gallo
  • 1 avocado, sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook sausage in a large skillet over medium-high heat 6 to 8 minutes or until done. Remove from skillet, and keep warm.
  2. Whisk together eggs and pepper. Add eggs to same skillet. Cook, without stirring, over medium-high heat until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
  3. Divide eggs among 4 bowls. Top with sausage, pico de gallo, avocado, and cilantro.
