Breakfast Bowls
Ingredients
- ½ lb lean turkey breakfast sausage
- 8 large eggs
- ½ tsp pepper
- 1 cup pico de gallo
- 1 avocado, sliced
- ¼ cup chopped fresh cilantro
Instructions
- Cook sausage in a large skillet over medium-high heat 6 to 8 minutes or until done. Remove from skillet, and keep warm.
- Whisk together eggs and pepper. Add eggs to same skillet. Cook, without stirring, over medium-high heat until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
- Divide eggs among 4 bowls. Top with sausage, pico de gallo, avocado, and cilantro.
