Bacon, Mushroom, and Tomato Crustless Quiche

Ingredients
- 8 slices center cut bacon
- 1 (8-oz) pkg sliced mushrooms
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 cup halved grape tomatoes
- 8 large eggs
- 1 Tbsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 350°F.
- Cook bacon in a large nonstick skillet over medium-high heat until crisp; drain, reserving 1½ Tbsp drippings in skillet. Crumble bacon.
- Add mushrooms, onion, and garlic to hot drippings in skillet; cook over medium-high heat 5 to 8 minutes or until tender.
- Spread mushroom mixture and tomatoes in a 9-inch pie plate coated with cooking spray. Place pie plate on a rimmed baking sheet.
- Whisk together eggs, mustard, salt, and pepper. Pour over vegetables in pie plate. Sprinkle with bacon.
- Bake 20 to 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges.
