Bacon, Mushroom, and Tomato Crustless Quiche

Ingredients

  • 8 slices center cut bacon
  • 1 (8-oz) pkg sliced mushrooms
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1 cup halved grape tomatoes
  • 8 large eggs
  • 1 Tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 350°F.
  2. Cook bacon in a large nonstick skillet over medium-high heat until crisp; drain, reserving 1½ Tbsp drippings in skillet. Crumble bacon.
  3. Add mushrooms, onion, and garlic to hot drippings in skillet; cook over medium-high heat 5 to 8 minutes or until tender.
  4. Spread mushroom mixture and tomatoes in a 9-inch pie plate coated with cooking spray. Place pie plate on a rimmed baking sheet.
  5. Whisk together eggs, mustard, salt, and pepper. Pour over vegetables in pie plate. Sprinkle with bacon.
  6. Bake 20 to 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges.
