Bacon and Cheese Baked Eggs

Ingredients

  • 8 slices center cut bacon
  • 8 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup freshly shredded Cheddar cheese
  • 2 Tbsp olive oil
  • Hot sauce (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Place bacon on a paper towel-lined plate; microwave on HIGH 1½ to 2 minutes or until crisp. Crumble bacon.
  3. Whisk together eggs, salt, and pepper. Stir in bacon and cheese.
  4. Grease 4 jumbo muffin cups or 4 (6- to 8-oz) ramekins with oil. Divide egg mixture among muffin cups or ramekins.
  5. Bake 15 to 18 minutes or until eggs are set. Serve with hot sauce, if desired.
