Bacon and Cheese Baked Eggs

Ingredients
- 8 slices center cut bacon
- 8 large eggs
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup freshly shredded Cheddar cheese
- 2 Tbsp olive oil
- Hot sauce (optional)
Instructions
- Preheat oven to 350°F.
- Place bacon on a paper towel-lined plate; microwave on HIGH 1½ to 2 minutes or until crisp. Crumble bacon.
- Whisk together eggs, salt, and pepper. Stir in bacon and cheese.
- Grease 4 jumbo muffin cups or 4 (6- to 8-oz) ramekins with oil. Divide egg mixture among muffin cups or ramekins.
- Bake 15 to 18 minutes or until eggs are set. Serve with hot sauce, if desired.
