Grilled Salmon

Browned Butter-Pecan Green Beans

Ingredients

  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 1½ Tbsp olive oil
  • ½ Tbsp Cajun seasoning
  • 2 (5-oz) frozen salmon fillets, thawed and patted dry (or use other frozen fillets)

Instructions

  1. Whisk together lemon juice, garlic, oil, and Cajun seasoning. Pour over fillets in a small shallow dish; marinate in refrigerator 1 hour.
  2. Preheat grill to medium-high heat. Grill fillets, covered, 4 to 5 minutes per side or until fish flakes with a fork. Season with salt and pepper, if desired.

  • 1½ Tbsp butter
  • ½ lb green beans, trimmed
  • 3 Tbsp chopped pecans
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Melt butter in a skillet over medium heat; cook 2 minutes or until butter has a nutty fragrance and is browned. Add green beans; cook 2 minutes.
  2. Add nuts; cook 3 to 4 minutes or until beans are tender and nuts are toasted. Stir in salt and pepper.
