Green Chile Turkey Burgers
Grilled Onion Salad with Creamy Avocado Dressing
Ingredients
- 1 lb ground turkey
- ½ (4-oz) can chopped green chiles, drained
- 2 Tbsp chopped fresh cilantro
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp ground cumin
- ½ Tbsp olive oil
Instructions
- Preheat grill to medium-high heat. Gently mix together turkey, green chiles, cilantro, salt, pepper, and cumin in a bowl until blended. Shape into 3 (½-inch-thick) patties.
- Grill patties, covered, on a grill rack coated with oil 6 minutes per side or until no longer pink.
Side Dish Ingredients
- 1 yellow onion, cut into ½-inch-thick rounds
- 2 Tbsp olive oil, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 clove garlic
- 1 avocado, coarsely chopped
- 1½ Tbsp lemon juice
- 1 (5-oz) pkg mixed baby greens
Side Dish Instructions
- Preheat grill to medium-high heat. Brush onion with 1 Tbsp oil; sprinkle with ⅛ tsp each salt and pepper.
- Grill onion slices, covered, 4 minutes per side or until browned and tender. Separate into rings.
- Process garlic, avocado, lemon juice, 1 Tbsp oil, and ⅛ tsp each salt and pepper in a food processor or blender until smooth.
- Toss together onions, greens, and dressing in a large bowl.
