Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 1 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 6 large eggs, lightly beaten
  • ¼ cup heavy cream
  • ½ cup shredded sharp Cheddar cheese
  • ¼ cup chopped roasted red pepper
  • ⅛ tsp kosher salt
  • ⅛ tsp crushed red pepper

Instructions

  1. Preheat oven to 375°F. Cook broccoli according to package directions.
  2. Meanwhile, cook garlic in hot oil in a small ovenproof skillet until fragrant. Stir broccoli into garlic in skillet.
  3. Whisk together eggs, cream, cheese, roasted red pepper, salt, and crushed pepper in a large bowl. Gradually pour over broccoli in skillet. Transfer skillet to oven.
  4. Bake 20 minutes or until frittata is set and beginning to brown.

  • 1½ cups grape tomatoes, halved
  • 3 Tbsp olive oil vinaigrette
  • ⅛ tsp pepper

  1. Combine all ingredients in a bowl. Chill until ready to serve.
