Easy Minestrone
Ingredients
- 1 (8-oz) pkg trinity mix (onion, bell pepper, and celery)
- 1 Tbsp olive oil
- 1 (32-oz) carton vegetable broth
- 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano
- 1 (15.5-oz) can dark red kidney beans, drained and rinsed
- 1 (15.5-oz) can cannellini beans, drained and rinsed
- 1½ cups ziti pasta
- 1 (6-oz) pkg baby spinach
- 1 cup shaved Parmesan cheese
Instructions
- Sauté trinity mix in hot oil in a large Dutch oven over medium heat 4 minutes. Stir in broth, tomatoes, and beans; bring to a boil, reduce heat, and simmer.
- Stir in pasta; simmer 5 minutes. Gradually add spinach, stirring until wilted.
- Cook 2 to 3 minutes longer or until pasta is tender. Top with cheese.
