Ingredients
- 1 lb ground pork
- ½ (8-oz) container chopped onion
- 3 Tbsp minced garlic
- 1 (1-oz) envelope taco seasoning mix (or use other seasoning mix)
- ½ tsp ground cumin
- ½ cup orange juice
- 1 lime, halved
- 6 burrito-size flour tortillas
- 1 (12-oz) round queso fresco, crumbled
- ½ cup chopped fresh cilantro
- 3 Tbsp butter
Instructions
- Cook pork, onion, and garlic in a large nonstick skillet over medium-high heat 10 minutes. Stir in seasoning mix, cumin, and orange juice. Simmer 2 minutes. Squeeze lime over meat mixture. Season with salt and pepper.
- Spoon pork mixture onto tortillas; sprinkle with cheese and cilantro. Fold over in half.
- Cook quesadillas, 2 at a time, in a sizzling hot skillet with 1 Tbsp butter per batch over medium-high heat 2 to 3 minutes per side or until golden. Cut quesadillas into wedges.
