Vegan Slow Cooker Smoky White Bean Stew

Ingredients

  • ½ (16-oz) pkg dried navy beans, sorted
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 clove garlic, minced
  • 1 Tbsp dried crushed rosemary
  • 1 tsp dried thyme
  • ¼ tsp salt
  • ½ tsp pepper
  • ¼ tsp smoked paprika (or use regular)
  • 1 (32-oz) carton vegetable broth

Instructions

  1. Bring beans and water to cover to a boil in a stockpot; cook 1 minute. Remove from heat, and let stand, covered, 1 hour.
  2. Drain beans, and place in a 4- or 5-quart slow cooker. Add onions and remaining ingredients. Cover and cook on LOW 8 to 9 hours or until beans are tender.
