Crunchy Fried Ice Cream
Ingredients
- 1 gallon vanilla ice cream
- 4 egg whites
- 3 cups crushed honey graham cereal
- 1 cup finely chopped pecans
- Vegetable oil, for frying
- ¼ cup honey
Instructions
- Scoop ice cream into 2-inch balls; place on a rimmed baking sheet, and freeze 2 hours.
- Lightly beat egg whites in a medium bowl. Stir together cereal and pecans in a separate medium bowl.
- Dip ice cream balls in beaten egg whites, letting excess drip off. Dredge in cereal mixture to coat; return to baking sheet, and freeze 1 hour.
- Pour vegetable oil to a depth of 4 inches in a large Dutch oven; heat to 375°F. Fry ice cream balls, a few at a time, 2 to 3 minutes or until golden brown.
- Drizzle with honey, and serve immediately.
