Crunchy Fried Ice Cream

Ingredients

  • 1 gallon vanilla ice cream
  • 4 egg whites
  • 3 cups crushed honey graham cereal
  • 1 cup finely chopped pecans
  • Vegetable oil, for frying
  • ¼ cup honey

Instructions

  1. Scoop ice cream into 2-inch balls; place on a rimmed baking sheet, and freeze 2 hours.
  2. Lightly beat egg whites in a medium bowl. Stir together cereal and pecans in a separate medium bowl.
  3. Dip ice cream balls in beaten egg whites, letting excess drip off. Dredge in cereal mixture to coat; return to baking sheet, and freeze 1 hour.
  4. Pour vegetable oil to a depth of 4 inches in a large Dutch oven; heat to 375°F. Fry ice cream balls, a few at a time, 2 to 3 minutes or until golden brown.
  5. Drizzle with honey, and serve immediately.
