Ingredients
- 1½ cups panko breadcrumbs
- ¾ cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 large eggs, lightly beaten
- 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
- ½ tsp garlic powder
- ½ tsp pepper
- ¼ tsp salt
- 1½ cups marinara sauce
- 6 slices mozzarella cheese
Instructions
- Preheat oven to 425°F. Combine panko, cheese, and Italian seasoning in a shallow bowl. Place eggs in another shallow bowl.
- Sprinkle chicken with garlic powder, pepper, and salt. Dip chicken in beaten egg, and dredge in panko mixture, pressing to adhere. Place chicken on a greased wire rack on a rimmed baking sheet.
- Bake 18 to 20 minutes. Top chicken with marinara and mozzarella. Bake 2 to 3 minutes longer or until cheese melts.

- 2 lb asparagus, trimmed
- 2 Tbsp olive oil
- ¼ tsp salt
- ½ tsp pepper
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 400°F. Toss asparagus with oil, salt, and pepper on a greased rimmed baking sheet.
- Bake 10 minutes or until crisp-tender. Sprinkle with cheese.
