Ingredients

  • 1½ cups panko breadcrumbs
  • ¾ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 large eggs, lightly beaten
  • 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp garlic powder
  • ½ tsp pepper
  • ¼ tsp salt
  • 1½ cups marinara sauce
  • 6 slices mozzarella cheese

Instructions

  1. Preheat oven to 425°F. Combine panko, cheese, and Italian seasoning in a shallow bowl. Place eggs in another shallow bowl.
  2. Sprinkle chicken with garlic powder, pepper, and salt. Dip chicken in beaten egg, and dredge in panko mixture, pressing to adhere. Place chicken on a greased wire rack on a rimmed baking sheet.
  3. Bake 18 to 20 minutes. Top chicken with marinara and mozzarella. Bake 2 to 3 minutes longer or until cheese melts.

  • 2 lb asparagus, trimmed
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ½ tsp pepper
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 400°F. Toss asparagus with oil, salt, and pepper on a greased rimmed baking sheet.
  2. Bake 10 minutes or until crisp-tender. Sprinkle with cheese.
