Ingredients
- 1 cup chopped onion
- 2 cloves garlic, minced
- ½ Tbsp Italian seasoning
- ½ Tbsp olive oil
- 1 (10-oz) pkg frozen veggie crumbles
- 1 Tbsp tomato paste
- 1 (14.5-oz) can petite diced tomatoes
- 1 cup tomato sauce
- 1 (14.5-oz) can low-sodium vegetable broth
- ¼ tsp salt
- ¼ tsp pepper
- ½ (13.25-oz) pkg whole-grain lasagna noodles, broken
- ¼ cup freshly shredded mozzarella cheese
Instructions
- Cook onion, garlic, and seasoning in hot oil in a Dutch oven over medium-high heat 3 to 5 minutes or until onion is tender.
- Add crumbles and tomato paste; cook 10 to 12 minutes or until thoroughly heated; stirring occasionally.
- Stir in tomatoes, tomato sauce, broth, salt, and pepper. Bring to a boil, reduce heat, and simmer 10 minutes.
- Add noodles; simmer 8 to 12 minutes or until noodles are tender. Serve sprinkled with cheese.
