Ingredients

  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • ½ Tbsp Italian seasoning
  • ½ Tbsp olive oil
  • 1 (10-oz) pkg frozen veggie crumbles
  • 1 Tbsp tomato paste
  • 1 (14.5-oz) can petite diced tomatoes
  • 1 cup tomato sauce
  • 1 (14.5-oz) can low-sodium vegetable broth
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ (13.25-oz) pkg whole-grain lasagna noodles, broken
  • ¼ cup freshly shredded mozzarella cheese

Instructions

  1. Cook onion, garlic, and seasoning in hot oil in a Dutch oven over medium-high heat 3 to 5 minutes or until onion is tender.
  2. Add crumbles and tomato paste; cook 10 to 12 minutes or until thoroughly heated; stirring occasionally.
  3. Stir in tomatoes, tomato sauce, broth, salt, and pepper. Bring to a boil, reduce heat, and simmer 10 minutes.
  4. Add noodles; simmer 8 to 12 minutes or until noodles are tender. Serve sprinkled with cheese.
